When Sydney wakes up she is listening to the train going past her window and thinking of The Beef.

Then she thinks of her debt, fire, fishes, and photos of her growing up. In fact, there are exactly 7 different types of fishes in these flashes, plus some sauce. Which is the same as the 7 fishes dish she ended up making for the restaurant.

We know fishes have a deep meaning for her too with the tattoo of anchovies she has on her back.

They're also a motif she's worn in her scarves. She first wore her fish scarf in Brigade when she and Carmy had their first real disagreement and started to try to communicate with each other better.

And then it appeared again in Forks when she was recipe testing the 7 fishes dish by herself.

The fishes were also brought up as a point of disagreement on Friends & Family night when Carmy was trying to argue that they had gone bad and needed to be remade.

We know something about that memory in the morning and starting that fire in the back reminded her of her catering days and shrimp. So she decided to make an etouffee for family meal, which Carmy helps her with and where his fish tattoo is shown.
