This is my super easy roasted asparagus, babycorn and prawns with brown rice which I had for lunch today and I will be having the rest tomorrow 🦔 This recipe should take about 20 minutes including prep time and serves two. Ingredients: For the prawns: 1 x pack of large prawns (mine were already cooked, but you can use uncooked) 2 x cloves of garlic A big squeeze of honey A large glug of lime juice A small glug of olive oil A big dash of paprika Chilli flakes (as much or as little as you want) For the asparagus: Large pack of asparagus with ends cut off A sprinkle of salt Olive oil to coat Other: Tilda’s brown basmati rice with quinoa Babycorn, cut to 1cm thick pieces Recipe: Heat your oven to 200 degrees (fan). Combine the ingredients for the prawns (leave the prawns to one side) in a container with a lid and mix with a fork. Add the prawns and the babycorn to the mixture, place the lid on and shake! Pop them in the fridge. Line a baking tray with foil and spread the asparagus out. Coat with olive oil and sprinkle the salt on top. Roast for six minutes. Put the asparagus to one side of the tray, turning them so that they’re coated evenly with the oil, and tip out the prawns and babycorn in the space that you have created. Spread them evenly. Roast for around 6-8 minutes. Start up the rice in the microwave and serve together once ready!
