A tasty and healthy Mediterranean quinoa salad with just the right amount of each flavor. With its fresh vegetables, salty Kalamata olives, and creamy feta cheese, this salad is both tasty and good for you.
Ingredients: 1 cup quinoa. 2 cups water. 1 cup cherry tomatoes, halved. 1 cucumber, diced. 1/2 red onion, finely chopped. 1/2 cup Kalamata olives, sliced. 1/2 cup feta cheese, crumbled. 1/4 cup fresh parsley, chopped. 1/4 cup extra virgin olive oil. 2 tablespoons red wine vinegar. 1 teaspoon dried oregano. Salt and pepper to taste.
Instructions: Use cold water to rinse the quinoa. Mix quinoa and water in a saucepan. First, bring it to a boil. Then, lower the heat and let it simmer for 15 minutes, or until the quinoa is cooked and the water is absorbed. Whisk the quinoa with a fork and set it aside until it's cool. Put the quinoa, cherry tomatoes, cucumber, red onion, Kalamata olives, feta cheese, and parsley in a large bowl. Mix olive oil, red wine vinegar, dried oregano, salt, and pepper in a small bowl with a whisk. Pour the dressing over the quinoa and mix it all together. Put the salad in the fridge for at least 30 minutes before you serve it so that the flavors can mix. Serve cold, and if you want, add more parsley to the top.
