Here I am to share this recipie that I have been absolutely devouring since the last week. I call it the Bastard Tiramisu because it's an absolutely bastardised version of the original one. To anyone who is gonna come at me lemme just clarify that I am a very broken college student just tryna be a lil happy.
Time taken to eat: in the blink of an eye
Instant coffee sachet (again I am broke, you can use espresso or any coffee lying around
Thick yoghurt (if you have one which is not that thick just drain the whey out and DRINK IT DONT THROW IT AWAY)
sweetner of your choice ( I use stevia, sugar is preferable)
Vanilla essence (few drops if possible)
Cocoa powder to dust (but that is extremely optional I don't use it alot tbh)
Take your yoghurt and keep it in the fridge till it is cooled down. Consistency can vary according to your choice. I have a semi pourable consistency. If you use greek yoghurt or hung curd then it'll be thicker and you'll have to spread it with a spoon
Take your yoghurt in a bowl and add a little sugar and a few drops of vanilla essence according to desired taste. It's not supposed to be super vanilla flavoured. Just enough to mask the smell of the yoghurt. I'd recommend not making the yoghurt too sweet because the biscuits already have alot of sugar. Just lightly sweet is the best way.
Keep the mix in the fridge to chill.
Take your instant coffee and add a little water to it. Don't make it too watery. The stronger the flavour the better. The lesser the water the more concentrated the coffee flavour. Espresso already has water in it so you're set.
Take a container. I use my coffee mug. A smaller and tallish container works best for single batch recipes.
Take your digestive biscuits and keep them ready on a plate cause you'll have to work fast.
Take your yoghurt out of the fridge and keep all the ingredients near you. Now all we have to do is assemble the dish.
Dip the digestive biscuit in the coffee and don't let it absorb alot of it. Just give a quick dip. Now because we are giving a quick dip, stronger tasting coffee is better for this step. (We don't want to soak them absolutely because the yoghurt will also release water will will be inadvertently be absorbed by the biscuits)
now place the biscuit at the bottom of the mug/ container and repeat with another biscuit. You need to make two/three layers because digestive biscuits are thinner than the original layfingers.
add a layer of the yoghurt mix, nearly the same thickness and a little more than the biscuits (again we are keeping the yoghurt thick because it will release water that will be absorbed by the biscuits)
Repeat the steps till the ingredients finish. If you have left over ingredients pick up another mug or container and make extra.
Keep it in the fridge overnight to chill.
Overnight the whole recipie will set itself and will become thick, rich and creamy.
You can dust cocoa powder on top for presentation and the slight taste. You can skip that too. Depends on you!
This seems very lengthy and tedious but honestly is very quick to make and very intuitive. You'll realise what and how you like it very fast and then you can add or remove flavour profiles too. The best part is that the digestive biscuits absorb water and become very crumbly which is great with the rich and creamy yoghurt. And I like to add a lil coffee to my yoghurt too but that's because I am addicted to all things coffee.
