I've been thinking about this possibility since Asgore's flashback in chapter 5, the colors seem very proposital. So I began searching for a pattern and I might've found it:

Chara: Carrier of a red soul, consumed by their hatred of humanity presumably attempted suicide by falling into Mt. Ebott.

Asgore (UT): Name is occasionally written in red, gave up his kind nature after losing his 2 children to humanity.

Frisk: Almost a blank slate, it's implied that they, too, didn't climb up Mt. Ebott for a good reason. The fact that they allow the player to do whatever they want might imply that they gave up completely on themselves and just doesn't care about what happens anymore.

I feel like the flag here also fits the theme I'm going for.

Kris: Clearly has a lot of identity issues given the mirror's dialogues. Heavily implied through Aqua that their soul might've originally been aqua colored. A lot of unresolved trauma. Worth noting that they start acting weird even before the soul took control (Toriel's dialogue with Alphys in ch. 2).

Asgore (DR): The flashback is very self explanatory. He goes from being colored yellow to red due to his obsession with the incident. He would proceed to ignore the most important things around him as implied by the flower climb sequence in ch.5.

Noelle: A red dot starts to increase in the Weird route after being pushed by the player into a bad direction. She gets crazier and crazier and the results are shown in the weird route of chapter 5.

Roaring Knight: When we first get a glimpse of their existence by Seam, their name is written in red. Not to mention that they use red in some of their attacks. This could make sense if they're truly someone who lost themselves.

All of these characters have forgotten who they are in some way or another. Of course, some other possibilities could be considered such as the color representing "Desire", "Obsession", "Hatred" or even "Determination" (although I feel like golden is more of a color for determination) but I feel like the first option I presented makes the most sense and would fit very well with the fact that we, the player, take advantage of their emptiness and we occupy their bodies as if they were already empty shells. I feel like the red color simply represents you being "tainted" with something (for instance, a feeling, memory or trauma) that turns you into something you cannot recognize, a type of dissociation. It's not that it's impossible for you to find yourself once again but "You can never wash it all away", the red taint will remain with you.

Evidences:

1st.: Clearly it isn't a normal person doing this, at the end of ch.4 Kris doesn't need to answer the call at all, they're not even close to the phone (in contrast to how in the weird route they had to answer Carol's call themself)

2nd.: In both circumstances (Kris and Spamton) only the "target" could answer and listen to the call, if anyone else got hold of the phone, they'd only hear garbage noises (in instance, us, that one Addison and Tenna).

3rd.: Clearly Kris is being followed by Friend and the new dialogues imply that so was Spamton given how Mew Mew specifically states that some would disguise themselves in order to try to escape the cats and all of Spamton's equipment defends against the cat element.
