Simon - i see simon as unlabeled in every sense of the word. I think while the COI treats sex as this very strictly managed/regulated/basically illegal act, to Eden its simply taboo. I like @ctrl-shift-alt-9 's headcanon that its an "exchange of services" thing on both stations. If someone wants to do it with you, that usually means they want something in return.
That being said Simon had a lot going on and I'm almost certain sexual attraction is the very VERY last thing on his mind for a lot of his life. he's too scared shitless to see anyone as anything more than a potential threat or an ally in battle. He doesn't trust a lot of physical touch so I can't see him doing that with just anyone, if at all, for a verryyyyy long time. maybe not for years, maybe not until he's safe and sound somewhere long enough to unpack everything shitty about his life. maslow's hierarchy of needs n all that.
that being said, i dont think sex is completely off the table for him. i can see him getting easily overwelmed/flustered by physical affection, he understands why but its deeply frusterating because Eden taught him it was something deeply embarassing/shameful/weak. It might take a lottt of patience to coax him out of his shell, teach him not to get so mad at himself over something as natural as physical attraction
grace - it is a very important part of the PHM book that ryland is scared of vulnerability. An ironic, very interesting, and very realistic take on a motherfucker that screams, cries, & rages for more than half of the time we get to know him. i see him feeling very indifferent/neutral about sex. he takes care of things himself when he feels he needs to, but another person's touch never really did much for him, so he is very rarely in the mood to do things with other people aside from js wanting to be the one to make his partner feel good (he likes impressing people and feeling useful) maybe this was a big part of what put strain on him and his ex's relationship, eventually leading to the break up. basically TLDR he's an asexual service top. it gives him an ego boost and he likes taking care of people, but feels uncomfortable the second the roles are switched
