So, in Tolkein lore, the world was originally flat, with most of the land in the middle (hence Middle Earth). But the Numenorians (men who were rewarded with their own Atlantis-equivalent island for service in the first big war against Melkor, but eventually Power Corrupts etc) tried to invade the uttermost west which was basically Elf Heaven. To put an end to that sort of thing, the creator of the world Bent The World and made it a sphere…but left elves able to treat it like a flat disk. So elves can sail west and reach Elf Heaven, but a man or dwarf or hobbit who sails west will eventually wrap around to the east coast of Middle Earth.
This is why Legolas can see for such great, almost impossible distances. The Earth does not curve for him.

Dwarves probably would be fascinated by something like the nervous system. Tolkien's dwarves were made by the Vala Aule (who they call Mahal, which in Khuzdul just means something like 'maker'). While he's called the smith of the Valar, he's also just flatly obsessed with orderly things. It's why his former Maiar, Sauron and Saruman, both fell, actually. They became so obsessed with making things orderly, they felt dominion over life was necessary to reorder things flawlessly. He evidently didn't impart to them the 'Don't be a dick about making things orderly' part.
Consider the Chamber of Awakening, where Durin the Deathless first awoke. It was personally carved by Aule, and was described as a perfectly, flawlessly symmetrical cube located inside Mount Gundabad. Dwarves never built anything there, and when orcs took it over, only their leader even entered the room, then apparently ran out cause it was so holy it freaked him out, so they'd just toss their garbage in it.
Because Aule taught the dwarves the stuff he knew, and when Eru gave them souls and they attained true life they still knew these things, they too were obsessed with things being well organized. They build complicated devices and machines, are capable of making flawlessly symmetrical objects, and everything they make is supposed to carry qualities of being almost perfectly arranged and orderly.
The nervous system is so complicated and orderly that if given the chance to study it, dwarves would likely obsess over it as a glorious biological machine. They'd probably make excellent doctors in any field related to it because of their ability to see how everything can be interconnected. In fact, you could probably say that of any physical medicine. They'd likely view the body as an extremely complex machine made of many other complex machines that just needs to be properly connected.
