Toffee Nut Cookies
I made some toffee nut cookies for my boyfriend recently and they turned out super tasty. They’re crunchy on the outside and chewy on the inside. Yum!
This recipe makes approximately 3 dozen cookies. You may double all ingredients to make 6 dozen cookies.
Ingredients:
1 1/4 cups all-purpose flour 1/2 teaspoon salt 1/2 teaspoon baking soda 1/2 cup (1 stick) unsalted butter, softened 3/4 cup sugar 1 egg 1/2 teaspoon vanilla 3/4 cup chopped Heath Bar pieces 1/4 cup chopped walnuts
1. Sift together the flour, salt, and baking soda. Set aside. In a separate bowl, combine the chopped Heath Bar pieces and chopped walnuts. Set aside.
2. Beat together the softened butter and sugar.
3. Beat in the egg and vanilla.
4. Mix in the flour mixture, a third at a time, until well blended.
5. Mix in the Heath Bar mixture, a third at a time, until well blended.
6. Chill cookie dough in the refrigerator for at least 30 minutes.
7. Preheat oven to 350°F.
8. On cookie sheets lined with parchment paper, form the cookie dough into small 1-inch diameter balls. Place dough balls about 3 inches away from each other on the cookie sheets. Make sure there is plenty of room between the cookie balls, and that the cookie balls aren't too big. The dough spreads out quite a bit while baking.
9. Bake for 10-12 minutes, until the edges are just starting to brown.
10. Remove from oven and let cool for a few minutes. Then transfer the cookies to a wire rack to cool completely.
After the cookies cooled completely, I placed them into small treat bags for easy snacking.
Organizing Plastic Bags
I was trying to figure out a way to organize all the unattractive plastic bags stashed in a lower cabinet of my kitchen when I came upon a tutorial online on how to fold them into triangles. You can see the tutorial I used here. The folding process is actually really simple and takes only seconds. After folding all of my plastic bags into triangles, the amount of space they took up in my cabinet decreased dramatically. I picked up a clear glass jar on clearance for $2 at TJ Maxx to store them in. I decided on a glass jar because it looks very attractive and has a large opening at the top which makes grabbing bags easy. I made a pretty label on Microsoft Word, printed it out, taped it on the jar, and done! I solved my problem with organizing plastic bags! This jar now rests neatly in my lower kitchen cabinet.
My dad is taking a flight to Vietnam today for his month long vacation. Originally, I was suppose to have work today and would not be able to take him. However, I found out yesterday that I am actually have the day off. Therefore I was able to take my dad to breakfast, take him on Bart for the first time to SFO station, go through the check in process with him since he doesn't know much English, drop him off right in front of security, and give him a giant hug and farewell before he left. As I watched him leave through security, I felt a tear run down my face. It wasn't because I felt sad. I just realized how old I am now to be dropping my dad off somewhere, rather than the other way around. I would not be who I am today without him. So blessed to have this day off and be able to do all those priceless things. Thank you to whoever is watching over me up there. (at San Francisco International Airport (SFO))

I bought some new earbuds and the packaging was pretty amazing. These are the Xiaomi Mi Piston Earbuds in Updated Brown Version. They are a Chinese company. I chose this one because it got really high reviews and has high performance for an affordable price. The reason I needed earbuds is because my commute to work in the city is quite boring without music. I sit through a 45 minute to one hour BART ride, walk 10 minutes to a MUNI stop upon arrival in the city, sit on MUNI for 10-15 minutes, and walk another 10 minutes to the hospital. That's one way. However, music makes it survivable. Time goes by way faster and my mood remains very positive as I let myself be consumed by wonderful sounds. Earbuds or headphones are a must-have for commuters.
Favorite Time
I am so excited for the cold weather. It's my favorite time of the year. I get to dress up in warm and cozy clothing. I love the feeling of cool air blowing by while I melt into a large knit scarf and over-sized sweater. Boots are also one of my favorite shoes to walk in. Warm drinks like hot chocolate and lattes are always found in my hand. Being indoors on cold days is also wonderful. Warm fuzzy blankets, rom-coms, and cuddling are just the beginning. Food even tastes better in the winter because I have more of an appetite and feel hungry often.
Love Love Love the holiday season. To me it's spending lots of time with my loved ones, seeing lot of beautiful lights all over the streets, longer nights, and giving to others. Something in the air is just different when I take in breaths. Even when I'm stressed during the holidays, something about the atmosphere lifts weights off my chest. It reminds me that life is limited so I should make the best of these happy moments.
Just thinking about the next two months and the excitement ahead makes me smile.
How I felt this morning when I found out that I got selected for Chinese Hospital's new grad RN program. While precepting at this hospital during my last semester of nursing school, I met so many amazing nurses and learned how to provide culturally competent care to the Chinese community. I loved being able to use my second language during nursing care and enjoyed learning new medical Cantonese while working. I also loved the fact that this hospital provides affordable healthcare to people of all socioeconomic levels. This place is like a hidden gem in SF China Town. After nursing school ended, I couldn't get this hospital out of my mind and stayed in touch with many of the nurses. After I returned from my vacation to Asia, I found out that they were going to do a new grad program. I immediately applied without a second thought even though I knew how competitive new grad programs are in the city. After 2 private interviews and a tough panel interview, I wished and hoped everyday while waiting for the phone call that would allow me to return to this hospital. It finally came today and I cannot be more thankful for every family member, friend, teacher, and nurse who helped me get to where I am. #NewLifeChapter
Start of a New Chapter in Life
I just went through this blog of mine and cleaned it up. When I began it back in 2010, I really took the time to express my emotions into words and posted meaningful thoughts. However, while I was in college, my time was directed into other things so I was unable to "blog" about my life as much. This blog became only Instagram photos and my frugal adventures. I decided I won't put so many Instagram photos on here anymore.. maybe just personal ones. I deleted pretty much all of the frugal living stuff since I have a whole separate blog for that. If you enjoy the frugal life stuff, follow my other blog HERE.
Now that college is finally over, my life seems to have been restored. Therefore, I will be able to legitimately blog about my feelings again.

Woke up from my nap, checked the BRN website, and found out I passed the NCLEX! The 4 years of ongoing stress from studying, late nights with 1-5 hours of sleep, long commutes through highway 37 traffic, and anxiety attacks about the NCLEX were all worth it in the end! I wouldn't have made it without my supportive family and friends who helped me along the way. I feel so blessed to have them all. Officially Sherry Tat, BSN, RN. #timeforavacation
