Chubby Belly

🍝This is super good. Take 300g of mixed short pasta, you can use different shapes and mix them together (this is done because it's a traditional dish and people used the shapes they had at home). Then take a medium-sized onion, a carrot, and a piece of celery and dice them very small. 3 or 4 medium potatoes and dice them too. In a large pot, add a good amount of extra virgin olive oil and sauté the onion, carrot, and celery. Then add the diced potatoes and some pancetta. Season with salt and black pepper and stir for a few minutes. Cover everything with water and throw in Parmigiano Reggiano rind. Let it cook for at least 30 minutes, stirring occasionally and adding water if it's too dry. When the potatoes mash easily, remove the Parmesan rind and toss in the pasta. Add more water and salt, and stir frequently until cooked. Once the pasta is ready, add 250-300 g of diced smoked provola cheese and stir to melt. Serve with a little black pepper and grated Parmesan
