Ingredients: 1 lb beef stew meat. 1 onion, diced. 3 carrots, sliced. 3 celery stalks, sliced. 4 cloves garlic, minced. 4 cups beef broth. 1 can diced tomatoes. 1 cup pearl barley. 2 bay leaves. 1 tsp dried thyme. Salt and pepper to taste.
Instructions: In a skillet, brown beef stew meat over medium heat. Transfer browned meat to the slow cooker. Add diced onion, sliced carrots, sliced celery, minced garlic, diced tomatoes, pearl barley, bay leaves, dried thyme, salt, and pepper to the slow cooker. Pour beef broth over the ingredients in the slow cooker. Cover and cook on low for 8 hours or on high for 4 hours, until meat is tender and flavors are well combined. Before serving, taste and adjust seasoning if needed. Remove bay leaves.
