PB&J Baked Oatmeal today

Hummingbird oatmeal, made with oats, coconut milk, banana, pineapple, shredded coconut, flax seed, chia seeds, and cinnamon

I made a Bananas Foster oatmeal bake (recipe courtesy of Oh She Glows)

So I know I've been slacking on the updates, but honestly, granola, English muffins, and smoothies aren't exciting enough to post every day. Today, I finally had time to make my beloved oatmeal again! This is pecan pie baked oatmeal with maple syrup used to sweeten. Happy autumn, everyone!

Okay so this is from like 2 nights ago BUT I made vegan chia waffles with PB caramel sauce and chipotle seitan and sweet potato hash.

Hoarders: Seitan Edition

I made vegan pumpkin muffins today :) I had one for breakfast with a pink lady apple, PB2/ coconut yogurt dip, and Goodbelly mango

Cinnamon roll oatmeal made with chia seeds, almond milk, coconut sugar, vanilla extract, Daiya cream cheese, and obvs cinnamon.

Coconut milk yogurt, Erin Baker's Kona granola, fresh mango and pineapple, and Goodbelly mango :)
