Seitan cutlets
Main ingredients: wheat gluten, white beans, tofu (all affordable). Prep time is not too long, but you do need to keep an eye on the seitan cutlets as they cook. You can make a massive batch though. The recipe yields around 21-25 cutlets depending on how big you make them, and you can also freeze them.
They are fantastic breaded and pan fried, but I also really like them in sandwiches, pasta or in wraps.
Tip: you can sub the MSG for 1 tbsp of nutritional yeast. Both work!
