vegan pie, take 2!

strawberry rhubarb pie and blackberry rhubarb pie-lets,

the homemade crust turned out super flaky with a delicate crumble. taking a tip from peruvian alfajores recipes, i used 1/2 flour, 1/2 cornstarch along with the coconut oil, vegan butter and ice-cold water.

pie and pie-lets both were devoured in <24hrs.

beet basil salad + tempeh strips grilled with cumin, paprika and horseradish + roasted sweet potatoes, leeks, cauliflower, fennel and cilantro in mirin, soy sauce, rice vinegar and olive oil.

my favorite bibimbap-inspired breakfast

lightly stir-fried kale and beet greens, raw chopped watermelon radish, avocado and two poached eggs, olive, salt & pepper, with toast +

mixed berry smoothie with bananas, frozen mixed berries, a large scoop of almond butter and soy milk.

five-bean vegan sloppy joe's (last bite!), sweet potato fries and creamy cashew dip (pureed cashews, dijon mustard, soy sauce, paprika and salt)
