Ingredients: 2 cups all-purpose flour. 1 cup granulated sugar. 1 teaspoon baking powder. 1/2 teaspoon baking soda. 1/2 teaspoon salt. 1 cup unsweetened almond milk. 1/2 cup vegetable oil. 2 tablespoons apple cider vinegar. 2 teaspoons vanilla extract.
Instructions: Preheat your oven to 350F 175C and grease two 8-inch round cake pans. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt. In a separate bowl, mix the almond milk, vegetable oil, apple cider vinegar, and vanilla extract. Pour the wet ingredients into the dry ingredients and mix until just combined. Divide the batter evenly between the prepared cake pans and smooth the tops. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Allow the cakes to cool in the pans for 10 minutes, then remove them from the pans and transfer to a wire rack to cool completely.
