This bright and flavorful recipe makes hummus that is both tasty and good for you by combining the earthy sweetness of beets with the creamy texture of chickpeas. The seed flatbread that goes with it is gluten-free and full of healthy foods.
Ingredients: 1 cup cooked beets, peeled and chopped. 1 can 15 ounces chickpeas, drained and rinsed. 2 cloves garlic. 2 tablespoons tahini. 2 tablespoons lemon juice. 2 tablespoons olive oil. Salt and pepper to taste. 1 cup gluten-free flour. 2 tablespoons ground flaxseed. 2 tablespoons sesame seeds. 2 tablespoons sunflower seeds. 1/2 teaspoon baking powder. 1/2 teaspoon salt. 1/2 cup water.
Instructions: In a food processor, combine cooked beets, chickpeas, garlic, tahini, lemon juice, olive oil, salt, and pepper. Blend until smooth and creamy. Adjust seasoning to taste. Preheat oven to 375F 190C. Line a baking sheet with parchment paper. In a mixing bowl, combine gluten-free flour, ground flaxseed, sesame seeds, sunflower seeds, baking powder, and salt. Gradually add water, mixing until a dough forms. Transfer the dough onto the prepared baking sheet. Use a rolling pin to flatten the dough into a thin, even layer. Bake the flatbread in the preheated oven for 15-20 minutes, or until golden brown and crispy. Remove flatbread from the oven and let it cool slightly. Then, slice it into desired shapes. Serve the beet hummus with the seed flatbread. Enjoy!
