I finally saw a Rheumatologist for my elbow. They gave me a shot of cortisone and I have to wear this Brace so that the tendon doesn’t break. Help to reduce swelling and movement. The 💉 shot is given every 4 months and will leave a permanent mark on my arm. I may need surgery if it doesn’t heal! Parmesan Parsley Garlic Potatoes 🥔 I found this on Facebook and it looked super tasty 😋 so I had to try it out. I don’t eat potatoes often so this is going to be a treat. The one thing I had trouble with was flatting the potatoes with a spoon. It just broke apart. I used the bottom of a can to do the rest and it worked much better. The other thing I noticed was while flipping them on the other side they started breaking apart. For next time I’m going to freeze them flat and then cook them. For me, I like them crispy on the edges. Super silky soft in the middle, crispy edges! For these wonderful tasty 😋 potatoes don’t take your eye 👁 off them while frying them in butter and honey. They will burn. I saw a video on Facebook for this breakfast to go pouch. This morning I tried it out and it was good. I used Roti flatbread, ham, cheese, egg, salt/pepper, parsley and green hot sauce. Baked it 15 minutes at 375°f it was wrapped in foil. I served a tomato bruschetta with it. Next time I’ll add a salsa inside. But this is an easy breakfast to go if you have the time in the morning to do it.
