Amaretto Cookies (Adaptable!)
Welcome to another long overdue post...
I really wanted to make a batch of eggnog cookies for New Years, but someone at the grocery store thought it was okay to stop selling eggnog as soon as Christmas was over, so I was forced to substitute... and I'm glad I was, because it resulted in a lovely little cookie and the best frosting I've ever had in my life.
I made buffalo style oven-"fried"cauliflower tonight! Simple k tasty--a perfect vegetarian alternative to the classic Super Bowl snack. I just mixed 1c milk, 1c flour, and 1Tbsp garlic powder together & coated the cauliflower with that before baking at 400F for 18 min (greased pan + an extra spray in top). After they came out of the oven, I tossed them in 1/4c Franks Buffalo Sauce + 3/4c Franks Hot Sauce + 1Tbsp butter.

Quick Fix: Gluten-Free Brownies
These brownies didn't turn out as pretty as the original recipe (probably due to my approximated conversions or under-baking), but they tasted amazing! Not super sweet, but still very chocolatey.
Coffee Cake Cookies
Take a deep breath, try to channel your inner Sandra Lee, and prepare yourself for these super moist, dangerously easy, semi-homemade coffee cake cookies! This is the recipe I turn to when I want to bake something special, but don't have the time or energy to bake from scratch.
I promise I have some real posts lined up for this blog (Gluten-Free Brownies, Coffee Cake Cookies, and maybe Polish Garlic Bread?), but until I get them all typed up... here are some boberry biscuits from Bojangles to tide you over!

German Chocolate Cake
Welcome to Long Overdue Post #1, also known as An Apology For How Busy I've Been This Semester.
One of my dearest friends came back to campus for his birthday weekend, so (of course) I insisted on making him a cake. He tried to tell me this was "not necessary" and he didn't need it, but let's be real here. Cake decorating is one of my favorite things to do. I can't sing. I can't dance. I can't play musical instruments. But cake? I can cake like nobody's business. I love cake, and this was the perfect excuse to go all out. There was no way I was going to let him be anything less than completely overwhelmed with both joy and sugar.

Things I Miss From Home: My fry baby and the ability to make fried pickles.
Ingredients:
1 egg, beaten
1 c milk
1 Tbsp Worcestershire sauce
3 1/2 c + 1 Tbsp AP flour
3/4 tsp salt + salt for post-fry
3/4 tsp ground black pepper
a dash of cayenne powder & hot sauce (optional)
1 jar dill pickles, drained & sliced
1 quart vegetable oil for deep-frying
ranch dressing to dip (optional)
Directions:
Heat oil to 350°F.
Set up a cooling rack with paper towel next to your fryer.
Drain & slice your pickles--thin & even!
In one bowl, mix together the egg, milk, Worcestershire sauce, hot sauce, and 1 Tbsp flour.
In another bowl, mix the rest of the flour with the salt, pepper, and cayenne pepper.
Get your stations set! Line everything up: milk, flour, waiting area, fryer, cooling rack.
Double dip: milk to flour to milk to flour. They may look a little heavily covered, but don't worry--they need to be!
Fry away! (Make sure to fry in fairly small batches. Use your first batch to test your flour/milk mixtures--add more cayenne, salt, pepper, or hot sauce as desired.)
Don't forget to salt the pickle chips as soon as you dump them onto the paper towel.
I recommend enjoying them with ranch, but something a little spicier would be nice, too!
Quick Fix: Ice Cream Sandwiches!
I made these a couple weeks ago for my roommates because I had left over cookie dough from Coffee Cake Cookies (coming soon!) and we had a shared tub of ice cream from a theatre event. Simple, but a huge success.
Things I Miss From Home: Hot Krispy Kreme Original Glazed Doughnuts (because anybody who's anybody knows that the absolute best time to get them is when the "Hot!" light is on--they just melt in your mouth)
Fun Fact: Krispy Kreme was started in my home state of North Carolina!
Things I Miss From Home: Grilled Pimento Cheese & Tomato Sandwiches (with Cheerwine, of course!)
I'm pretty sure I made this for lunch every day for a week before I came back to school. Now (alas!) I can't find any decent pimento cheese... and my stock of Cheerwine is running dangerously low. What's a girl to do? :(
(PS: I miss you, too, Family! It's just easier to talk to you all than it is to talk to a non-existent pimento cheese sandwich!)
Pimento Cheese Risotto/Arancini
These arancini combine two of my absolute favorite adjectives: fried and cheesy. What more could you want? Well, I suppose you could want quite a lot of things, but these might help you forget about that for a bit.
Risotto isn't difficult. It takes time, sure, but I find the process almost soothing. Plus, you can tell people that the constant stirring of the rice as it absorbs the stock helps you add love to the dish. (I recommend only doing this if you're making these for people you actually care about and not someone you actually can't stand but find yourself inexplicably making dinner for--how did that person even wind up in your house? You should probably take a step back if something like that happens. Maybe you should look at your life and look at the choices you've made that have led you to that situation. You stood there for 40-60min stirring risotto to make these! Don't share them with those kinds of people! Reserve this for nice people. Or just yourself... your lonely, fried-cheese-loving self.)

Some long overdue pictures of the lemon 9-Ball cake pops I made for the show I SM’d!
I used sugar eyeballs (found at Michael’s) for the 9s—just turned them over and drew on them with a food-coloring marker! I dipped the balls halfway in yellow candy melts to make a shell. They turned out so much better than expected! :)
A quick update: I've had a couple mishaps with the last two recipes I tried (super melted truffles and terribly under-baked lemon blueberry bars), but I'm probably going to put up a recipe for my pimento cheese risotto/arancini soon! I'm just not feeling as inspired without a whole group of people to bake for... hopefully getting back to school will help! (P.S-If anyone at school wants to bake together or just keep me company and then eat everything I make, please shoot me a message!)
