I’ve been quiet for some time, due to my studies and other projects. I’ve decided not to repost other DIY blog posts, but to share my creations instead. It may be less often, but you will access unique DIY projects here on Homemade Projects.
First, starting with this very comforting soup :
Sweet Potato, Broccoli and Carrot Soup Recipe
Since it was first published in French, here is the translation of the recipe.
Ingredients
1 tbsp olive oil
1 oignon, coarsely chopped
2 garlic cloves, minced
5 carrots, sliced
900 ml chicken broth
1 broccoli
2 sweet potatoes, peeled and cut into pieces
1/2 tsp of rosemary
1 tbsp fresh parsley
Salt and pepper
Cooking cream (15%) to taste
Preparation
Remove the broccoli flowers to form like a broccoli quinoa. Put aside. Cut the remaining broccoli into pieces.
Heat oil in a cauldron on medium heat and sauté oignon for 2 minutes. Add garlic cloves and carrots. Stir for 1 minute.
Mix in chicken broth, chopped broccoli, sweet potatoes, rosemary and parsley. Add a pinch of salt. Bring to boil. Lower heat and cover. Simmer for 15 minutes or till the vegetables are cooked through.
Remove cauldron from heat and blitz with a stick-blender. Add the broccoli quinoa. Season to taste. Divide in bowls and serve with a fillet of cream. Decorate with more broccoli quinoa and parsley leaves.
