I have a question: How come Harry couldn't see thestrals before his fifth year even though he watched his mother die? Also, do you think if someone witnesses death but is then obliviated would they be able to see them anyway?

Did he see his mother die? He was there but he was also a baby so he might not have seen it and also has no memory of it.

I think if they are obliviated they would still see them though. I don’t think it works off memory but by losing some sort of innocence in seeing death you gain the ability to see the world from a different view.
