Personally, I don't know any specific book that I can recommend. But here's a post with a Hellenic Witchcraft reading list and a Google Drive link for some books.
For reading, I would just start with searching for myths and Homeric hymns. This is the best way to start and get acquainted with the Gods. Depending on whether you already know what Deity you wish to worship, you can search specifically for myths and hymns involving them or jump from text to text until something catches your fancy.

When reading, try to make notes about what you're learning and noticing.
If you're looking for something to watch to learn, I found a podcast called "The Rest is History", and they have a playlist for Greek Mythology
A YouTuber who makes Hellenic Polytheist content of some kind is Fel the Blithe.
The site Theoi can be a good start for basic information. It's very detailed, from what I noticed, and it has a pretty good collection of texts and quotes for each deity.
Hellenion.org has a nice calendar.
For Tumblr, I see a lot of posts from Stag "khaire-traveler". I love their subtle worship posts. Don't know much about his practice, but I think their blog is great for beginners.
I started my worship journey in the 2010's, and looking back at it, I was doing weird things that felt right only for me. But there are a few things that I notice always help beginners:
- Having a physical representation of your deity, like a candle, plushie or statuette. Anything that will make you feel closer to them and feel their presence.
- Starting with a dedicated space. That doesn't mean a lavish altar or anything. Just a clear space, where you can store your practice necessities. I started with a shelf, but now I just use a wooden tray.
- Adding symbolic food to your diet. Research what is something associated with your deity, like an edible flower, plant or herb. Some deities have a food item that symbolises them, like chocolate for Hera. Just buy it once in a while, snack on it, or use a herb as a staple in your cooking.
- Starting a journal. Store all the information you learn. Subject to research. Prayers and rituals that you want to try. Anything that you deem important, for future reference and better memory.
Some deities don't have texts in general that are focused only on them. It's specifically the Goddesses. They are mentioned only in connection to men, in competition with other women or almost not at all, like Hestia. Make sure to note that the myths were written by humans, who used those texts to justify their unjust systems. Like showing Zeus (and a lot of other male Gods) as rapists and cheaters, to justify the ancient man's own abuse.
Give yourself time to learn.
Ask questions. Make mistakes, and let people educate you. Slowly you will find your groove <3
