So happy it's not hot and I can bake things. Went with the great Deborah Madison's banana oat muffin recipe, but then I made it vegan by using flax eggs and "buttermilk" hemp milk. Did you know that you can make most nut milks into buttermilk by adding 1 tbsp apple cider vinegar or lemon juice to 1 cup of milk and letting it sit for 15 mins? Yep, it works. Soaking these mung beans for sprouting. Making your own bean sprouts is the easiest thing to do and it's kinda fun to watch them grow!
