Beef with Bow-Tie Pasta
It was a long day out in the sun (despite the 100% rain forecast that didn’t happen), so we wanted a relatively easy dinner. We had thought about grilling, but we decided on this pasta instead. Since it was my original dinner plan, that was fine with me.
The recipe is from an old Betty Crocker supermarket check-out cookbook, which still manages to contain tasty things after all these years (seriously, it’s from the 90s). I pretty much made the recipe as written, except I don’t think I cut the sirloin thin enough (I was really, really tired). I used 1 bunch of asparagus, because that seemed like plenty, and 1 onion, because onions used to be quite a bit smaller so I was guessing that was equivalent. I cooked the veggies in reduced-sodium beef broth, which works fantastic and is amazing. If you use a nonstick pan, skip the spray step. You can make easy tomato puree by dropping a can of diced tomatoes (with juice) in the blender if you don’t have any puree on hand (and who does, really?). I also omitted the last 1/2 cup beef broth, because the skillet with the steak had a ton of liquid in it already and I thought that would be too much.
I thought the sirloin was a bit chewy. Whether that was because it was sirloin or due to my complete inability to cut it thin enough I have no idea. The pasta was really tasty, though, so I think next time I’ll make it with 1/2 lb of sliced mushrooms instead (probably cooked in the other 1/2 cup of beef broth). I think that would be amazing, actually. That being said, the sirloin tasted good, so don’t let my preferences deter you.
Beef with Bow-Tie Pasta

Ingredients: 1-1/2 lbs beef boneless sirloin steak 3 cups 2-inch pieces asparagus (1 lb) 2 medium onions, sliced 1-1/2 cups beef broth 4 cups cooked farfalle (bow-tie) pasta 1 cup tomato puree 3 Tbs chopped fresh basil or 1 Tbs dried basil leaves 3 Tbs chopped sun-dried tomatoes 1/4 tsp pepper 2 Tbs freshly grated Parmesan cheese
Trim fat from beef. Cut beef into 2-inch strips; cut strips crosswise into 1/8-inch slices.
Spray 12-inch skillet with nonstick cooking spray. Heat skillet over medium heat until hot. Cook asparagus, onion, and 1 cup broth in skillet 5-7 minutes, stirring occasionally, until liquid has evaporated; remove from skillet.
Add beef to skillet. Cook ~2 minutes, stirring frequently, until beef is no longer pink. Return asparagus mixture to skillet. Stir in remaining broth and remaining ingredients except cheese. Cook ~2 minutes, stirring frequently, until mixture is hot. Sprinkle with cheese.
Yield: 4-6 servings
