Nothing better than a home made sugar pie. Traditional Belgian recipe : Use a ready pie dough and garnish it with a mix of 2 eggs + 125 ml crĆØme fraĆ®che + 100gr of white sugar and 150gr of brown sugar ( in Belgium we use the sugar called ācassonadeā ) Mix all firmly and put it over the sought Add 20gr unsalted butter cut in 5 blocks : one in the middle and the 4 others on the side Then you bake it for 25 min at 180 degrees Bon appĆ©tit

Another Belgium tradition for New Year : āGalettesā (at Nieuw Sloten)
When I was a kid i could enjoy those everytime i was following my parents in our " happy New Year" social visit to old relatives .... Galette for me and for my parents they were associated with a shot of fruits liquor
Nothing easier to do those :
You mix in a bowl 150gr of melted butter with 3 eggs
you add 150gr of sugar and 150gr of self raising flour
you can add in the mix a soup spoon of rhum or few drops of vanilla extract or even a drops of orange blossom
then.... just put a good tea spoon of mix in the botom of the waffle Iron and let bake for 2 to 3 minutes.
Let cool down and store them once cold in a metal box.... but they shoudnt last long anyway :-) Bon appetit

I was walking into a Turkish food shop when I came face to face with this forgotten fruit : Quince . My parent and grand parents had a tree of those āGolden Apple ā in their back garden and used to do jam ( the fruit is not good to be eaten raw). I didnāt hesitate a second and bought 5 pieces ( 1,6kg) and decided to cook a spicy jam with it. Nothing better than vanilla, cinnamon, nutmeg, cloves and star anise ( all spices that I bring back from my regular trip to Indonesia) to complement the delicate pear fragrance of this forgotten beauty ! Itās a bit of work but the result is worth it !

Home made āMadeleineā are delicious and so easy to prepare : Mix 2 eggs with 150gr of sugar Add 150gr of melted butter and mix again Add 150gr of white flour and 8gr of backing powder and a pinch of salt and mix again Preheat your oven on 180 degrees Add 1 tea spoon of orange blossom and 30gr of chocolate chips in your preparation Place the mix in the form ( I use the traditionnel Madeleine one but you can use other form ) and put in oven for 15 minutes at 180 degree Celsius Check regularly for the color Once baked let it cool down before taking it out of the form. You can store them in a metal box up to a week .... but Iām sure they will be all gone before that š Bon appĆ©tit
All started few years ago.... I was so fed up with that industrial bread you can buy in supermarket... The type of bread with the elastic type of slice : you can extend it and it always take back his original size and shape ... I remembered the bread from my childhood : golden crispy crust and firm crumb ... I didnāt need more than that to make the jump and start to bake my own bread ... all organic ... all like in my childhood! And bread was just a start ... from there I started to cook and bake more homemade from jam to preserve to cookies and cake .... with that feeling to discover a lost treasure ....the taste and smell from the past ....
