Late snack (last night)
Forgot to post this, but while I was having the hummus and pita chips, I also dipped into some fruits I got yesterday! Strawberries, pineapple, and grapes :)

Dinner!
For lunch during class today I had another burrito bowl, as I did last week, consisting of rice, beans, corn, lettuce, sour cream, guac, salsa, cheese. I didn’t get a picture though, I always dig in too fast haha.
For dinner (and lunch tomorrow) I’ve made a salad using a sping mix (has various things; kale, arugula, spinach etc) with avocado, cucumber, zucchini and tomatoes :). Only dressing I have on hand is french, I would have liked to do oil and vinegar though! Also having a cold pressed juice from Starbucks, sweet berry kind :)
Late post-work dinner
Picked up a Roasted Tomato & Mozzarella Panini from Starbucks today on the way home from work cause I’m tired and don’t want to make anything! First time trying it though, it’s good! I do really like their paninis, their hama and swiss (sadly lol) was my favourite before it was taken off the menu over the summer I believe.Â

Work snack
Had a kiwi at work today as a little snack as well as some almonds. Didn’t get a chance to post my lunch as I was working a double today, but I had some pasta with tomatoes and mushrooms :)
Parfait breakie again!
Having the same breakfast I had yesterday morning, (yogurt + muesli + berries)!
Mixed pasta dinner!
This is one of my favourite quick meals, it’s a garlic pasta mixed in with carrots, broccoli and corn! Simple but so good :)
Green smoothie (snack)
Made myself a green smoothie, consists of 3 clementines, around half a banana, 2 cups spinach/baby arugula (premixed), some flax seed, and probably around 2 cups pineapple, with just water as the base :)Â

So for breakfast today (for once I’m very excited about lol), I am having vanilla yogurt, with super berry muesli, and mixed berries! Super good :). About 22g of protein in total, and a good amount of vitamins too! (for about 400g yogurt, 60g muesli, not really even counting the berries) :)

Falafel Subway Dinner! (Subway)
Today for dinner I tried for the first time, falafel in general, but on a sub at subway. I had it on italian and herbs bread with cheese, lettuce, spinach, tomatoes and green peppers with tzatziki  sauce! I’m not sure how much I actually enjoyed the falafel patties, I think they were spiced a bit in a way I didn’t enjoy as much. I think I would enjoy it more as like smaller pieces in perhaps a salada for exmaple rather than thick patties of it on a sub. Either way, glad I tried!
Upton’s BBQ Jackfruit! (lunch)
So today for lunch I decided to try the BBQ jackfruit I got in my December vegan cuts snack box. I made it with rice in a wrap! I have a video freview I will be posting of it on Youtube sometimes this weekend maybeor next week. Definitely a good product for those of you who enjoyed like pulled pork (or that texture, which was spot on) and BBQ/hickory. I myself am not much of a bbq-hickory person in general, and this product was overwhelming sauced (in a good way for most people). Definitely was fun to make and try, I would be interested in trying their other flavour which is lime something. I think overall this product did a great job at replicating what is the taste and texture of BBQ pulled pork.
Snack break!
I know neither of these are necessarily super healthy or extraordinary but I was in a new building today for a new class and I didn’t know where any food places were located. Tried the bluberry-lemon muffin for the first time (wamred) and it was so good. Also grabbed their strawberry greek yogurt parfait with berries/grandola, I know it probably had qutie a bit of sugar but it also had 13g of protein :)

Grilled Veggie sandwich! (lunch)
Today I went to Qoola, somewhere I normally wouldn’t eat (other than for frozen yogurt) but since not eating meat I’ve been  more inclined to exploring new foods and places to eat. So I got a grilled vegetable sandwich with grilled zucchini, roasted red peppers, harvarti, tomatoes and baby arugula on a multi bun! I wasn’t a big fan of the peppers but other than that it was so delicious! I’ve never tried grilled eggplant but that was also an option, so I think I will next time I go :)/ I definitely think I will be eating there more often, they have multiple vegetarian wraps/salads/ and sandwiches that look delicious :).Â
