Zucchini loaf
Photographed in the tin because I was afraid it would fall apart but it didn't, it actually held together pretty well. But I forgot to take another picture.
2 medium zucchini (about 700, 800 grams)
100 g ricotta
80 g grated parmesan
80 g breadcrumbs
2 eggs
Optional: ham and/or cheese, cubed
Grate (chop, spiralize) the zucchini, add about 1,5 teaspoon of salt, mix well, and let it sit for at least one hour. Take a clean tea towel and squeeze as much liquid out of the zucchini as you can.
Mix breadcrumbs and parmesan, and set aside a large spoonful. Prepare the tin by greasing it with oil or butter.
Mix all the ingredients with also some pepper (since zucchini were previously salted, it shouldn't need any more), fill the tin, sprinkle the breadcrumbs/parmesan mixture you had set aside on top, bake at 200°C for 25 minutes.
Could probably be made into patties and fried.

Orzo with feta and cherry tomatoes
For 2 portions:
Large handful of cherry tomatoes, cut in half (or larger, chopped)
onion, garlic, oregano
150 g orzo
1 cup of vegetable stock
feta (about one 200 g block)
salt and pepper
lemon
In a pan that has a lid, add some oil, cook briefly onion and garlic, add tomatoes, salt, oregano, cover and cook for about 10 minutes.
Remove the lid, add orzo, mix well, let it cook for a minute or so, then add stock and place half of the feta block in the middle. Put the lid back on and cook for 10 minutes (or check the instructions for orzo on the package). While it's cooking, check if it dries out too much and add liquid if needed. Remove the lid, give it a stir (feta should be creamy by now) add the rest of the feta by crumbling it on top, add freshly squeezed lemon juice, adjust seasoning if needed
Savoury muffin with chorizo and brie, lettuce, bell pepper
Lettuce, bell pepper, cucumber, beets, pickled egg

Air fryer cheese muffins
pretty much the same as these but swap sugar for cheese. I've added bell pepper to the bottom right one.
¼ cup plain yogurt
¼ cup neutral tasting oil
¾ cup self-raising flour (about 100 grams cake flour+1 scant tsp baking powder)
1 egg
¼ cup freshly grated parmesan (or other hard cheese, if you use pre-grated fluff it up a bit or you'll end up with too much cheese)
¼ cup cheese of your choice, cubed
Mix all the dry ingredients, mix all the wet ingredients, mix them together, preheat the air fryer for a few minutes, put into 3 tulip or tall muffin cases or 6 standard ones, bake 20 mins at 140°C, test with a toothpick
If you donāt use self-raising flour, you can swap 1 of the three measuring cups for another flour: cornmeal, rice flour, cornflour...
About muffin cases: around these parts the standard is 30mm tall, they fit nicely into standard 6 or 12 muffin pans, with this amount you should have muffins without much of a muffin top. The ones I used here are from ikea and they're 40 mm tall, and since I bake them in single portion tins they grow tall and don't have the muffin top shape.

Hey Gallus, since i feel like Iām late to the show, how big of a Bread Jesus are you making this unholy Easter-April Foolās ?
ā¦Iāll know when I take the dough out of the oven in an hour?Ā Iāve never made Challah before and Iām not sure how much this will rise.Ā But I have a slightly-smaller-than-average sized oven, so itāll have to fit on a cookie sheet. Hence, Baby Bread Jesus.
Update: heās beautiful. Also, Iāve made a serious tactical error in that I donāt know how Iām getting him on to the baking sheet.
Do you have something flat without raised edges? Put flour on it and carefully lift Baby Bread Jesus bit by bit up and slide the flat item underneath. Then you can just transfer him onto the baking sheet.
I got him on via the silicone baking sheet, and heās in for the second coming proofing and already beginning to distort into a monstrosity. I love him.
That sounds awesome.
While heās proofing, do you mind telling us, how you got the different colours of the dough? Different dough? Food colouring?
Is he filled with jelly?
The light color is regular Challah Dough, the darker color is the same but with a bit of molasses and cinnamon.Ā Iāve done it before for other sweet doughs where I wanted a color change.

1. Iām renting and donāt want to lose my damage deposit becuase thereās smuckers on the ceiling.
2. I try not to keep grape products in the house in general (the juice is a noted passover exception) because Mr. Charleston Chew thinks all things grape-related are delicious and Grapes are very, very toxic to dogs and I donāt want to have to put him in hospital for 3 days to pump his kidneys again.
