Taking in the scenes while I can pre-race. Starting to let go of that inner hater and being thankful to be able to experience these moments and some amazing views with @dr_kalina . People say it’s not a pretty ride. I think there are some pretty amazing sights and landscapes. The sun and wind were for today’s recon ride out towards Hawi. Crazy to be able to see the course all laid out before you; we rode all the way to that land mass poking out into the sea in the distance and still didn’t reach Hawi. Ok it's nothing fancy but I found a chicken salad recipe that used yogurt and avocado in Shalane Flanagan's and Elyse Kopecky's book: Run Fast Eat Slow. It also used tarragon which I have never used before so that was pretty exciting - smells like black licorice. I was skeptical but taste test reveals that this tangy mix may be mighty tasty on my salad greens tomorrow 😋. However as I shred 1.5 lbs of chicken into this I start thinking what type of bean or veg could replace the chicken - a white bean?
