This is young jackfruit. I have found out recently that it is actually picked this early for... cooking! Young jackfruit curry is amazing and I love using it also in other recipes. Today it will become a base for my spaghetti sauce, that we sell at the Sunday Market (it was already in one of our you tube videos - link in my profile) The spaghetti tastes like original bolognese, but has no meat and just a drop of coconut oil. I'm improving the quality of "chunky texture" and I want to try today how an addition of jackfruit will help me with that. Sauce is based on mushrooms, cauliflower and carrots besides that.
