Make your own chicken quesadillas!
I figured out my own chicken quesadilla recipe awhile back with some flour tortillas, chicken breast, cheese, and half a packet of chicken taco seasoning. Now I'm the go to person to make them lol.
What you need:
a pack of boneless, skinless chicken breasts (usually has 3 breasts in it)
2 to 3 packs of flour tortillas (and a 4th for good measure)
2 to 3 bags of taco blend cheese
a pack of either McCormick or Old El Paso chicken taco seasoning (we buy McCormick, it's a few cents cheaper). If you can't find chicken taco seasoning, you can probably get by with regular taco season or mild taco seasoning.
Prep:
Put the chicken breasts on to boil (all 3). As you're boiling them, set out the chicken taco seasoning (or whatever seasoning you're going to use). When the chicken breasts are done, let them cool.
Shred at least a breast and a half. You can use your fingers (this is why I said let it cool!), or two forks, or one of those meat shredders.
Mix in the pack of the chicken taco seasoning. Stir. Always be stirring. Mix in some of the chicken broth from the pot to the bowl. Once the chicken is well coated, you can move on to cooking!
Cooking:
Get a skillet out. We use a large one to cook at least 2 in at a time. Wipe the skillet and either spray with Pam or put cooking oil in it (if you use oil, make sure it spreads).
Get out your cheese and tortillas. Put your ingredients in how you want — we do cheese on one side and chicken on the other. Make sure you flip them for even cooking. (And they cook FAST!)
We are able to make about 15 chicken quesadillas just using one pack of chicken taco seasoning and a breast and a half of chicken. They're also better than Taco Bell's!!
