These Cream Wafer Tree Cookies are delightful treats, perfect for festive occasions. The buttery, melt-in-your-mouth wafers are sandwiched together with a touch of powdered sugar and adorned with colorful sprinkles.
Ingredients: 1 cup unsalted butter, softened. 1/3 cup heavy cream. 2 cups all-purpose flour. 1/2 cup granulated sugar. 1 teaspoon vanilla extract. 1/4 teaspoon salt. Green food coloring optional. Powdered sugar, for dusting. Assorted sprinkles for decoration.
Instructions: In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy. Add the heavy cream and vanilla extract to the butter mixture. Mix until well combined. Gradually add the flour and salt to the mixture, mixing until a soft dough forms. If desired, add a few drops of green food coloring to the dough and mix until evenly colored. Divide the dough into two equal portions and shape each into a disc. Wrap them in plastic wrap and refrigerate for at least 1 hour. Preheat the oven to 375F 190C and line baking sheets with parchment paper. Working with one disc of dough at a time, roll it out on a floured surface to about 1/8-inch thickness. Use tree-shaped cookie cutters of different sizes to cut out tree shapes from the rolled dough. Place the tree cookies on the prepared baking sheets and bake in the preheated oven for about 8-10 minutes, or until the edges are lightly golden. Remove from the oven and let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely. Once the cookies are completely cooled, spread a thin layer of powdered sugar on the bottom side of half of the tree shapes. Gently sandwich the remaining tree shapes on top of the sugared ones, creating tree-shaped cookie sandwiches. Decorate the tree cookies with assorted sprinkles, pressing them gently into the sugared edges to adhere. Allow any decorative elements to set before serving or storing the cookies.
