This Beef and Veggie Skillet is an easy, quick, and cheap meal that is full of flavor and good for you. It's great for busy weeknights when you need to quickly make a healthy dinner. It's both filling and healthy because it has ground beef and colorful vegetables in it.
Ingredients: 1 lb ground beef. 1 onion, diced. 2 cloves garlic, minced. 1 bell pepper, diced. 1 zucchini, diced. 1 cup corn kernels. 1 can 14 oz diced tomatoes. 1 teaspoon chili powder. 1 teaspoon cumin. Salt and pepper to taste. 1 tablespoon olive oil.
Instructions: Set a pan on medium heat and add the olive oil. Add the minced garlic and diced onion and saut until the garlic smells good. Put in the ground beef and cook it until it turns brown. Chop up the zucchini, bell pepper, and corn kernels and add them. Make sure the vegetables are soft. Chili powder, cumin, salt, and pepper should all be mixed in now. Simmer for 10 to 15 minutes, stirring every now and then, until the flavors blend. Serve hot, and if you want, top with fresh herbs like cilantro. Have fun!
