These Quarantine Cookies, also known as The Cookie of Desperation, are a delicious treat that can be whipped up with basic pantry ingredients. Perfect for satisfying sudden cookie cravings during challenging times.
Ingredients: 1 cup all-purpose flour. 1/2 teaspoon baking soda. 1/4 teaspoon salt. 1/2 cup unsalted butter, melted. 1/2 cup granulated sugar. 1/4 cup brown sugar, packed. 1 teaspoon vanilla extract. 1 large egg. 1 cup mix-ins chocolate chips, chopped nuts, dried fruits, etc..
Instructions: Preheat the oven to 350F 175C and line a baking sheet with parchment paper. In a bowl, whisk together the flour, baking soda, and salt. In another bowl, mix the melted butter, granulated sugar, and brown sugar until well combined. Add the vanilla extract and egg to the butter-sugar mixture and mix until smooth. Gradually add the dry ingredient mixture to the wet ingredients, stirring until just combined. Fold in the mix-ins chocolate chips, nuts, etc. until evenly distributed throughout the dough. Scoop spoonfuls of dough onto the prepared baking sheet, leaving space for spreading. Bake in the preheated oven for about 10-12 minutes, or until the edges are golden brown. Remove from the oven and let the cookies cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely. Enjoy your Quarantine Cookies with a glass of milk or your favorite beverage!
