Farm and Fare's Orange Ricotta Pancakes are a great way to start the day. They have the rich, creamy taste of ricotta cheese and the bright, tangy taste of fresh oranges. They're great for a special breakfast treat or a brunch on the weekend.
Ingredients: 1 cup all-purpose flour. 1/4 cup granulated sugar. 1 tsp baking powder. 1/2 tsp baking soda. 1/4 tsp salt. 1/2 cup ricotta cheese. 2/3 cup freshly squeezed orange juice. 1 tbsp orange zest. 1 large egg. 2 tbsp unsalted butter, melted. 1 tsp vanilla extract. Additional butter or oil for cooking. Maple syrup and fresh orange slices for serving.
Instructions: In a large mixing bowl, combine the flour, sugar, baking powder, baking soda, and salt. In another bowl, whisk together the ricotta cheese, orange juice, orange zest, egg, melted butter, and vanilla extract until well combined. Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; a few lumps are okay. Heat a non-stick skillet or griddle over medium-high heat and add a little butter or oil to grease it. Pour 1/4 cup of the pancake batter onto the hot skillet for each pancake. Cook until bubbles form on the surface of the pancakes, then flip and cook until golden brown on both sides. Repeat with the remaining batter, adding more butter or oil to the skillet as needed. For the filling:. 1/4 cup unsalted butter, softened. 1/2 cup brown sugar. 1 tsp ground cinnamon. 1/4 cup chopped nuts optional. For the orange glaze:. 1 cup powdered sugar. 2-3 tbsp fresh orange juice. 1/2 tsp vanilla extract.
