The very worst can be found in marketplaces & street stalls while the very best can be found at nondescript restaurants usually known only to locals. One can usually spot a good place though: is packed during brunch time and the food at every table looks the same. The rice is usually soaked in oil before going to steam w/unshelled cloves of garlic, peels and all. This ensures complete enfusion into the rice. The chicken is steamed normally so quality doesnt vary greatly, but what restaurants compete over is the dipping sauce, which sets apart the wannabes from the masters. Usually made on a base of sweet soy sauce, lots of raw, minced garlic, chillis and any additional distinctively chatacteristic family secret ingredients. The cucumber slices are simply for occasionally cleansing the palette.
