🥣 Dill Pickle Pasta Salad

🛒 Ingredients:

2 cups dry pasta (elbow, rotini, or shells work great)

1/2 cup dill pickles, diced

1/4 cup red onion, finely chopped

1/4 cup mayo (adjust to taste)

1 tablespoon yellow mustard (or Dijon for a twist)

1–2 teaspoons dried dill (or 1 tbsp fresh dill, chopped)

Salt and pepper, to taste

(Optional: Splash of pickle juice for extra zing)

🔪 Instructions:

Boil pasta in salted water until al dente. Rinse with cold water to stop the cooking.

Chop pickles and red onion finely.

Mix the dressing: Combine mayo, mustard, dill, and a bit of salt and pepper in a large bowl. Add a splash of pickle juice if you want more tang.

Toss everything together: Add cooked pasta, pickles, and red onion into the bowl with the dressing. Mix well until evenly coated.

Chill for 30 minutes or longer to let flavors meld (but you can eat it right away if hungry).

Taste and adjust: Add more dill, salt, or mustard if needed.

💡 Optional Add-ins:

Shredded cheddar

Chopped celery

Crumbled bacon

if you ever played the original XCom then you might want to check out Open XCom. Its the same clunky pixel graphics. There are just a few really great QOL adjusts. And it is fantastic. XCom from 1994 is a video game classic for a reason.

I make my team of men I always wanted to date ( and some women too ) - wink - then I watch them as I play. This morning we lost Ginger from Gilligan's Island, Oprah and John Wayne. JW had 40 some kills when he was shot by a giant metal disc.

I love this game so much. I just added John Travolta and Beyonce to my team. Too bad for them.

My boss said this to me my 3rd week on the job! She was advising me to really think about what I needed for a firm salary to be all in.

I don't have any of my own but I do have pets and they make sure I have any time I need to deal with them. The other day we went to the vet mid day on a really busy afternoon because that was when my appointment was. I was going to cancel and my boss actually said to me "don't do that. We will manage." - Amazing!

Can you imagine being okay with this? What sort of person could go into a meeting, watch the power point, come out and go do their part in all of this? That is the part I find amazing. I couldn't do it? Would not matter if I couldn't afford my 3rd home, yacht and kids college time at some place that costs a few tens of thousands of dollars yearly. This is amazing and it is sick.
