I definitely make spaghetti sauce extremely wrong but I'm not going to stop
Chop 1 onion and put it in a pot.
Add 1 or 2 cans of diced tomatoes. Whatever makes the ratio of onion look right.
Add a ridiculous amount of frozen peas. Peas should make up a notable portion of this sauce.
Add frozen corn also if you wanna be real fancy. If I have bacon, I'll add that too, but I very rarely have bacon.
Cook on HIGH.
While sauce is cooking, grab the nearest bottle of mixed spices that isn't obviously for desserts. Add some. How much? I dunno, enough that you feel like you've added seasoning so it's technically cooking. (For me this is most often a mix called Moroccan, but it could be anything. I've reorganised my kitchen recently so tonight it was something called Pizza Topping.)
If you happen to have green herbs lying around, add those too. Whatever you have on hand that's green.
Let the sauce boil on HIGH until all the water is gone. Stir occasionally so the saucepan will be easier to clean later. Serve on cooked spaghetti noodles with no cheese.
Today I added a new step called "while the sauce is cooking, duck out for 15 seconds to post about spaghetti sauce on Tumblr, then get distracted and forget you are cooking." This adds a novel Extremely Burnt edge to the flavour profile.
I am not Italian, or of Italian descent by *any* stretch of the imagination.
I am also not one of those "cooking purists", who believes that everything must be done in a specific/ traditional way (unless you are making a cooking video with the title "how to make x" in which case if you don't specify mid video that your way is not traditional god help you).
I am a firm believer in "If it tastes good, then it is correct for you".
Except in this case.
This hurts every cooking bone in my body. The latent ancestors in my soul. The judgmental elf in my brain just bit a cyanide capsule.
Why? The spices. Using a different spice mix every time, based on what is ready at hand just ... hurts.

I mean you can also do it in the same pot you're making the spaghetti sauce in! The important thing is the onions get a little cooked before the wet stuff goes in, so they're not so wet and limp and boiled....
Honestly this depends entirely on whether I remember to chop an onion first or I find the can opener for the tomatoes first. The ingredients go in in whatever order they go in.

Also if you put in a tin of beans then you don't need the peas any more, and you were all super upset about the peas. It doesn't have to be kidney beans, sometimes I use cannellini or butterbeans or a four bean mix. If I'm feeling fancy.
I've also been putting some chilli peppers in it.
i would like to start off by saying yes beans are normal food, i agree. but like, the wording implies you only use spice mixes ? and then maybe some additional spices you have on hand? surely sometimes you just grab whatever singular spices you have available to make your own custom mix? that being said frozen corn for when you're feeling fancy? why would anyone cook with corn for a sauce if it's not a chili
Currently I'm using cumin, cayenne pepper and paprika, because that's what I have on hand at the moment. But I generally prefer premade spice mixes because they cost the same and I'm not very good at making my own blends. When I do it myself it never has the same depth as premade mixes, and there's absolutely no point in following the mix recipe because then why not save myself some measuring and just get the mix.
I like sweetcorn and it's expensive. So it's for being fancy. A treat for when I feel like splurging.

Unfortunately I hate tofu it tastes awful. Marinating it for long enough to mask the disgusting tofu taste isn't worth it.
you blitz the tofu in the sauce, so it loses the tofu flavour.
If not, you could always add some walnuts.

Real talk, in 2017 the library I worked at did a renovation and one of the things we added was a single-gender restroom at the back of the children's area. The idea was so that dads could take kids to the bathroom without it being weird, but our director overheard my coworker and I talking one day about how it'd be handy for trans folk & how we should put it on the trans friendly bathroom map when it was open.
And the director said, no no, it's for parents with kids.
So my friend and I said, wait, are we supposed to stop people if they're going in there without kids?
And she said no, they don't have to have a kid with them, maybe they have a kid who's in the children's area and they don't want to go far away.
Oh okay, so we should ask them if they're here with a kid?
And at this point the director was starting to get annoyed. No, you don't have to make people fill out a checklist before they go to the bathroom. We just expect that adults won't be hanging out in the kid's section without kids
Okay, I (an adult services librarian) said, so should I offer to go get books for them if they want a children's book and they don't have a kid with them?
And should I (my friend the children's librarian) ask adults without kids to leave the children's section? How long should they get to browse before we ask them to leave?
And the director said "I'm not asking you to police people's bathroom usage or keep all adults out of the children's section, just let me know if someone is being weird"
And the visibly trans woman who was a library regular (and who knows how many other trans and genderqueer people) used the single restroom in the back of the children's section and it was never a thing again (at least not while I was there)
It's very easy for cis people to make stupid rules but it's even easier to make them backtrack by pointing out exactly what kinds of conversations they'll have to have with strangers in order to enforce those rules. This wasn't even a coordinated plan from my friend and me; this was just weaponized autism. We wanted to know what kind of awkward conversations we were being asked to have. (The director probably took the final step that neither of us did, that she'd already made it clear that if we found someone looking at porn on a library computer or carrying a gun on library property, we didn't have to confront them, we could always get her, and there was no way she could get out of bathroom police duty if she made it an actual rule )

The whole idea of "artistic value" is vague, subjective, class-bound, culturally contingent, and notoriously easy to manipulate. It protects the famous, the canonical, the university-approved, the politely transgressive, the books with blurbs and pedigrees and respectable defenders.
But it does not protect cheap paperbacks, exploitation novels, underground comix, anonymous erotica, obscure zines, fanfiction, pulp horror, badly written shock fiction, or the work of people too poor, strange, stigmatized, or low-status to have critics rushing to declare them Important. It is worth pointing out that marginalized sexualities and subcultures have often only been able to speak through these low-status, disreputable forms.
The right to express yourself should not depend on whether your prose is elegant or meaningful in the eyes of a judge or jury. If a human made it, then it is meaningful to them, and that is enough to give it intrinsic value.
I do not defend ugly, stupid, tasteless, or exploitative books because I think they are somehow secretly noble. I defend them because freedom that only covers the respectable is a fraud.
If a book must audition for its right to exist by proving its cultural worth to authorities, then liberty has already been replaced with permission.

Before the pandemic hit I have given a bunch of talks on this topic, on how the lack of archiving regarding things not being considered "culturally relevant" actually left us with a bunch of gaps in knowledge on old times. Most notably this is also why we need to archive stuff like old pulp magazines and penny dreadfuls and what not. This stuff is important, because it actually shows us a lot more about general sentiments of the time than we could have by just looking at the literature that was well regarded.
I also think that from ancient times the stuff that is actually way more interesting to look at rather than exchanges between nobles, commanders, and officers is the letters of the normal folks. This still has obviously the bias that in ye olden days a lot of people could not write at all, so their stuff is not preserved at all. But by looking only at the "important" people we miss pretty 99% of people.
Also, the fact that even the porn that has been preserved from old times gets often not discussed in historical or cultural study classes creates this idea that ye olden times were not horny. I guarantee you: they were. And to remember that... I am sorry, dearies, we gotta archive and actually culturally discuss porn.
(Side note: for my Castlevania fics I literally went down a whole rabbithole on medieval porn. It was enlightening.)
When you're unable to solve an IT problem at work, there really is nothing quite like having it escalated all the way up the ladder. With every step, there is a degree of smugness about how real my problem is, and that yes, I was right to have trouble with this.
You can get a minor version of this if one IT person solves it but they spend a bunch of time repeating things you’ve already tried and when they eventually solve it it’s by doing something you wanted to try but didn’t have the requisite permissions to do
Was in a situation where neither I, nor my boss knew what was causing the problem, so we ended up calling one of the head engineers, and ive never experienced anything quite as validating as the moment where said head engineer, after spending several minutes just staring at the problem, quietly said "what the fuck"
