Ingredients: 1 can black beans, drained and rinsed. 1 can kidney beans, drained and rinsed. 1 can pinto beans, drained and rinsed. 1 can cannellini beans, drained and rinsed. 1 can chickpeas, drained and rinsed. 1 onion, diced. 3 cloves garlic, minced. 1 red bell pepper, diced. 1 green bell pepper, diced. 1 jalapeno pepper, minced. 1 can diced tomatoes. 2 tablespoons tomato paste. 2 cups vegetable broth. 2 tablespoons chili powder. 1 tablespoon cumin. 1 teaspoon paprika. 1 teaspoon oregano. Salt and pepper to taste. 2 tablespoons olive oil.
Instructions: In a large pot, heat olive oil over medium heat. Add onion, garlic, and peppers. Cook until softened, about 5 minutes. Stir in chili powder, cumin, paprika, and oregano. Cook for 1 minute. Add diced tomatoes, tomato paste, vegetable broth, and drained beans. Stir to combine. Bring to a simmer and let cook for 20-25 minutes, stirring occasionally.
