For those wondering how it tastes. Its very light and fruity with a small acidic and alcohol bite at the end. Im very proud of my first batch. I have decided to name it Stardust Crusade. Before you ask yes this is a jojo reference
My first batch if mead is basically done I have to wait for it to clarify but initial tasting I'm super happy with. It tastes like a lightly spiked kool aid. The ending abv is 13.5%, my goal was 13%. Pretty good for a first attempt. I am a little confused as how I ended up with slightly more product then i started with.
A lot of sediment fell out of suspension over the past few days. I like the color it turned. Here are some pick before and after racking.

A dramatic change in everything since yesterday I thought it would take longer for the fruit to start to break down. The co2 is getting trapped in between the berries so I will have to find a way to gently agitate it. There is a method called the punch down method where you just push the fruit down i will start trying that.
Today I racked my mead as primary fermentation is pretty much done. I took my gravity reading and it was about 1.012 meaning I'm sitting at about 11.55% abv after primary. My end goal is about 13% at the end of secondary I should be close to it.
I did give it a taste and low and behold it tasted like mid shelf mead. It wasnt the cleanest thing I tasted but it will need time to clarify and all the dead yeast to fall out.
I mentioned this before for secondary fermentation i added some frozen mixed berries to hopefully partially cold crash it and add flavor.
Here it is in its new vessel already starting to gain color. Not as many bubbles from the yeast. I'm running under the assumption that they need to acclimate to the new environment and warm up a little before they start munching the newly introduced sugars.

Today gravity reading is 1.05 do if my math is right i made about 6.5% abv at the end of week one. It smells like old beer so I guess its working. Maybe I used to much yeast. Next batch I will use half a pack instead of a full pack. We will see what the results are next week.

For my next batch i may try and use a fermentation jar rather then a carboy. the pressure is pushing the bung out more then i care for and I worry the seal isn't good enough.
Have you come up with a pun to name the mead with? Don't lie and say it wasn't going to be one.
