Though non-citrus sodas are technically allowed, they're Very taboo and citizens of Seabrooke had superstitions that other monsters could be made with other sodas. 'I bet vampires are made by fruit punch' or 'werewolves would definitely made by rootbeer" ... much to the annoyance of the actual werewolves who'd heard such rumors through one grapevine or another.

I haven't decided yet if the outside world would be told of the soda's correlation. If everyone was notified, I imagine there was another moonshine era but for soda, with people stuck between following health regulations or having their sweet freedom and bevrages. By the start of the films, soda could almost even become a luxury item, like a $180 bottle of the most refined lime Fanta.
