Directions:

THIS TUBE WILL SAVE YOUR LIFE

I come from a Hungarian family, and we put this stuff (paprika paste) in everything. Soups, salad dressings, meatloaf, beans, meat seasoning/rub type things, and sandwiches.

I never really cared about it, but since becoming a vegetarian, I’ve realized its P O T E N T I A L

IT MAKES EVERYTHING TASTE GREAT. YOU ONLY NEED ONE PEA-SIZED SQUIRT AND EVERYTHING TASTES DELICIOUS. I MISSED SANDWICHES AFTER GIVING UP MEAT BUT NO! I EAT SANDWICHES WITH THIS STUFF, RADISHES, TOMATOES, LETTUCE, AND CARROTS AND IT’S BETTER THAN MEAT SANDWICHES! SO GOOD! I’VE EATEN FOUR TODAY!

It comes in regular and spicy!! The spicy tube has a flame on it, or it will say ’csipos’ to tell you it’s spicy! There’s also another tube that looks really similar but is orange and instead of just having paprika in it, it also has red peppers and spices and is the base for Hungarian goulash, which I have slowly started vegetarianizing for my personal enjoyment.

THE BEST PART? THE TUBES ARE ONLY LIKE $3!! I live in Canada, and I find them in Polish/Italian/other ethnicity specialty stores. They last FOREVER because you only need tiny amounts! AND (at least the red one) is both vegetarian and vegan!! Really, we’re covering all our bases!! You need to refrigerate it after you open it, but it lasts forever.

Equipment:

glass baking dish

sharp knife

carrot peeler

cutting board

pot for boiling water

Ingredients

1 butternut squash

cheese - I used cheddar but you can use whatever you have on hand

sauce - I used enchilada sauce but you can also use pasta sauce, again whatever you have in your pantry

half a pound of frozen peas (optional)

Steps:

Set pot to boil and preheat the oven to 350

microwave the peas until defrosted

Peel squash and cut it in half lengthwise

Cut into strips about half an inch wide

Boil the squash for about 10 minutes, until it is tender enough that you can cut it with a fork

Spread a thin layer of sauce at the bottom of the pan

Add a layer of squash

Sprinkle some of the peas

Top it with cheese

Continue until you run out of squash then top with a final layer of sauce and cheese

This is a great recipe for when you need to clean out your fridge or if you’re stuck with what you have until payday. it’s also relatively cheap and can easily take submissions based on tastes, what’s available, or what’s on sale. I made a 9x13 pan of this and it will probably be my dinner for a week. The recipe below is the bare minimum, but you can easily add additional ingredients.

Ingredients:

1 can black beans

2 cups cheese

2 lbs ground meat (turkey, pork, and beef all work great imo) 

1 package taco seasoning

1 jar salsa OR chopped tomato, onion, and jalapeno

2 cups roughly crushed corn chips* OR cooked rice

Preheat oven to 325 F. Very lightly grease 9x13 pan. Drain black beans and rinse well.  

Fry meat in sauce pan until browned. Toss in black beans and continue cooking until meat is well done. Drain and add taco seasoning to taste. 

Cover bottom of pan with corn chips or rice. Layer meat/bean mix over rice. Then, cover meat/bean layer with thin layer of salsa. Continue layering until you run out of meat. Cover casserole with cheese and cook for 30-35 minutes. Serve hot.

Casserole will keep in fridge for a few days and holds up well in the freezer.
