We haven't posted in a while, apologies but it's all with good reason. Most will know why we closed suddenly, but we always planned on closing for a while after our soft launch anyway, so that we could rectify issues we found as a new business & kitchen. We didn't think things would go as well as they did, so the soft-launch lasted far longer than we planned. Anyway, we aren't planning on re-opening until January now, but there is work happening every single day. We have bought extra pieces of equipment that we didn't realise we needed, we have new automated food hygene controls like fridge sensors in all 5 fridges and freezers with alarms and constant temp records for the Environmental Health Officer. We are also building our recipes on something called Kafoodle to ensure consistent recipes and consistent margins. The last thing you want to do is buy food from somewhere that doesn't make money, because shortcuts are the easy/lazy solution. Anyway, we are now selling our smoker in the picture after a pretty thorough refurbishment, shotblasted with new paint and seals. It's not really big enough for our plans moving forward and we are having a new one custom built for us. We have done a video show-around of it which you can see on our YouTube channel (link in bio). A burger that is as visually stunning as it is impressive to the El Gobbo. Omelette fried burger bun, Smoked chicken breast, Grilled cubed courgette and field portobello mushroom, a slice of grilling cheese, baby gem lettuce and home Pickled Red onions in with a hint of chilli (from the jalapeño peppers in the same pickle. This was just playing at home, but it's going on the menu as it was great. It was also kind of strange to get such a juicy burger that had no influence on the bun. As in, the bun being grilled, it didn't take on any soggyness at all. The juice stayed inside the burger ingredients. But then that's what you should ALWAYS REST YOUR MEAT before serving. It's been a while since we posted and..... Shep 🐕 is still with us and is doing so well, he has literally defied everything the vets said! It was like he was listening and thought "fek that, I'm gonna carry on being the vest dog ever for a good while yet... 😂🥰 The truth is, we just don't know. Over £6,000 later, Pride Vets still say he has the most aggressive and fastest cancer a dog can have, while Sheps like "Cancer who? Never heard of her luv". Anyway, we have been showering him in love, cuddles, walks, fussed and he's had far more food and treats than he's ever had. But life goes on and for all we know he has days, months or a year. Getting onto Vikings... Initially we closed because we wanted family time and to make sure Shep felt super loved and that what we thought might have been his last day or two, to be as close to the best as we possibly could. However, we have also been perfecting things in the kitchen. While we haven't received a single negative review on Facebook, we have 19 full-on 5 star reviews. That being said, we haven't been happy with the food. It was good, but we didn't achieve the results that would (in our view) rock anyones world. We have had several furniture move around along with creating so many process improvements that it isn't 'normal business' stuff. We have been using our 17 years experience (22 years combined) in running a manufacturing company to perfect our training, staff management, process improvement, training manuals and get ultra hot on our food hygene. So, prepared to be impressed, because we are preparing to impress you! 🤛💪 We are also upping our burger and hot dog game, BIG TIME 🌭 🍔 Not to mention the Pizzas! Remember, these are the only strictly neopolitan style wood fired Pizzas anywhere near our postcode(s) whatsoever. Peoper artisanal dough, fresh toppings every single day while using the best wood we can in an Italian imported refractory clay pizza oven. We have been there every day since a few days after we closed, seeking perfection in everything we do. What's more, the idea is that this is a template for further branches. We aren't opening this week 😥 Our dog Shep is seriously ill and we don't have our head in the game, we need to make sure we are available at any time to take him to specialists, scans and so on. We aren't really interested in any scenario where we decide to open, the kitchen needs us and we weren't there for Shep in time, or we were with Shep and the kitchen needed us and Vikings gave poor service to our customers. So we think it's just going to be better to close until next week. I'm sure most dog owners think this, but we couldn't ask for a more loyal, affectionate and loving dog, Shep has been with us for a long time and he's 14 on Halloween, until now, the occasional sneezing fit has been the only sign of weakness in his health. He loves life, food, sunbathing and having his ball thrown and he's incredibly fit, fast and agile still, so we know he hasn't done with life yet. It's looking like it'll be expensive, the CT scan alone is £4,500, but Shep is truly a special member of our family and we can't imagine life without him. Ironically, we gave our younger dog Tucker up for adoption only the day before Shep took ill last weekend. We were struggling at home with 2 kids, a 2 year old and a 10 week old, 2 dogs and 2 businesses. We just couldn't spread our attention far enough and it wasn't fair on anyone. Tucker bullied Shep a lot into playing and Shep just wanted to be left alone, so adoption was really the best thing for everyone. We were finally looking forward to giving Shep more attention and making his golden years the best ever. And again, it was literally the day after that he was diagnosed with Anemia. He has Immune Mediated Haemolytic Anaemia and has had to have a blood transfusion already and we weren't expecting him to make the night on Monday. But he's still seriously ill and it could go either way, but we just need to make sure we are 100% available 100% of the time just in case. Without doubt, closing is absolutely the right choice this week. We apologise for any inconvenience, but I'm sure everyone will understand. Especially the vast amount of dog lovers we have in Sawley. No experience necessary, just eager to learn our Viking ways. We are having staff nightmares with people off for COVID and all sorts. We have good people here, just not enough of them.
