I'm home now. I feel like I just got off of a roller coaster... 'bout to go back for more.

What a wild ride.

What a wild ride it's been. My time in Tallinn is almost over, but my advegnture is just getting started. I'm so thankful right now. Thankful for the opportunity to be a part of this amazing start-up conference; for all of the amazing support from the mentors, staff, and other participants; and especially for my awesome team.

Now, onto the next chapter.

A few people asked me for the recipe to make this, so here goes:

-1-2 Cups cubed tofu/soy protein/veggie-meat (I used soy protein, which you can find at many Asian grocery stores)

-1-2 cloves of garlic, chopped

-Half a small onion, chopped

-Handful of mushrooms, chopped

-Quarter a bell pepper, chopped

-Tomato-pineapple salsa (medium spicy)

-Olive oil

First I sauteed the garlic and onions in olive oil on medium-high heat. After a few minutes, I added the mushrooms and bell peppers before adding the soy protein shortly thereafter. I sauteed the whole lot until the soy protein started browning. Finally, I generously poured on some tomato-pineapple salsa, and let it sizzle and simmer for a few minutes.

I was in Stockholm yesterday. It's quite a beautiful place! I was only there for a day, which is not nearly enough time to begin to explore that city. While I was there, I noticed separate vegetarian menus at a couple of places--felt almost like home.

So nice to be eating tofu again! I stir-fried it with olive oil, onions, bell peppers, and salt before pouring on some sweet and spicy pineapple-chili salsa. Yum!

Went to the local Rimi "hypermarket" today. After about 15 minutes of browsing around, I was pleasantly surprised to find some tofu. It was expensive, though--2 Euros (~$2.65)! For reference, I pay $1.69 in Los Angeles, California for a block of tofu almost twice the size.

I met a fellow vegetarian at Garage48--a startup hub in Tallinn! It's nice to know that a few of us are around.

This was pretty good! Something resembling fried rice and stir-fried vegetables with marinara sauce. Yum!

Hey, I found some vegan options!
