so as I’ve posted about before, I have a mint patch that is out of control and I’m always trying to come up with ways to use it. and what’s a pie that’s overwhelmingly minty, well grasshopper pie of course! only problem is it’s not traditionally mint that gives it that flavor, it’s crème de menthe. and while there are a few recipes out there that don’t use that, they all use mint extract instead, not fresh mint. so I ended up having to frankenstein a mint simple syrup recipe, a simple syrup whipped cream recipe, and a grasshopper pie recipe together. and it turned out… really good, actually! shockingly! I was terrified that the mint flavor wasn’t going to come through at all, but it actually tastes SO minty. it’s not the traditional grasshopper pie taste, more like mint tea, but damn if it’s not mint!

I also used the rest of the mint to start making mint extract. It’s gonna be done in about a month, so I might make another pie then if I have time to test it
