Pecan + Walnut Milk recipe
Prep time 15 mins
Cook time 5 mins
Ingredients
1 Cup Walnuts
1 Cup Pecans
4 Medjool dates, pitted
1 Cup Water (for soaking)
2 Cups Water (to be added later)
â…› Tsp Cinnamon
instructions
In a bowl, combine walnuts, pecans, dates, and one cup of water. Let soak for at least 4 hours. However, if you're pinched for time, soak nuts and dates with one cup of boiling water instead, for about 10-15 minutes.
In a blender, add nuts, dates, the water it was soaking in, two additional cups of water, plus the cinnamon. Blend on high for at least two minutes, or until mixture is smooth in the blender.
Line a large bowl with a nut milk bag. If you don't have one, you can also you a cheesecloth or even a fine mesh sieve. Just note that using a sieve may not result in a super-smooth milk.
Once all of the mixture has been poured, squeeze the liquid out into the bowl.
Once you've squeezed out as much liquid as you can, transfer the milk into an airtight container. I like to use mason jars. The milk can be used immediately, or can be kept in the refrigerator for up to a week.

True Story and your history lesson for the day about Mahatma Gandhi and Coffee:
Coffee was banned in Sabarmati Ashram but kept for guests who would arrive. One day, a sick South Indian who was down with dysentery requested a cup and Gandhiji knew that he would not stop until he had some relief.
'Oh, you unrepentant sinner, that is what you want! And then seeing the disturbed look on the lad's face, he added: You certainly shall have your cup of coffee. Yes, light coffee will soothe your stomach. And what will you have with the coffee? I don't think we can make uppama or dosa but warm toast would go well with coffee. I shall send you a tray.' said the Mahatma.
After a while he returned,'Now here is your coffee and toast. And, mind you, I made you, coffee myself. Now like a good South Indian, will you certify I can make a good coffee?"
'But,' whispered the lad, 'why did you not ask someone else to bring this in to me. I am so very sorry I put you to this trouble.' 'Now, now,' said Gandhi, 'do not ruin your coffee. Cold coffee is bad coffee. You see Ba was resting, and I did not care to disturb her.
