My theory is that Agatha needs to kill in order to keep Nicholas alive. That's why the day she doesn't kill the witches, Nicky dies. That is why she tells him that killing witches is the only way he'll survive. It's like a deal Rio had with Agatha in a way. To give her more time. That is why she tells Rio that the truth is too awful and that what she did to her was only take. She became a serial killer to save try to keep her son alive. She lost her humanity. And then kept killing out of spite, or to gain more power to try and get Nicky back with the Darkhold.
