Ingredients: 1/2 cup of popcorn kernels. 2-3 tablespoons of coconut oil. Sea salt to taste. Optional seasonings: nutritional yeast, garlic powder, paprika, or cinnamon Paleo-friendly.
Instructions: Over medium-high heat, preheat a large, heavy-bottomed pot with a tight-fitting lid. Pour in the coconut oil and swirl to coat the bottom of the pot evenly as it melts. Add a handful of popcorn kernels to the pot and place the lid on it. Remove the test kernels from the pot after they pop, then add the remaining popcorn kernels. To ensure even heating throughout, replace the lid and give the pot a gentle shake. To avoid scorching and encourage even popping, keep shaking the pot from time to time. Take the pot off of the heat when the popping slows down to a burst every two to three seconds. Remove the lid with caution, being mindful of any residual steam. Add sea salt and any other optional Paleo-friendly seasonings of your choice to the popcorn. In order to evenly distribute the seasonings, toss the popcorn.
