Actually Saint André is a blend of the brie mixed with equal parts of thick sour cream and whipped sweet cream so it has a bit of a tangy and butter taste. Long story short, it’s brie with more pop. BOOM! The cheese is produced from happy cows chilling in the Normandy region. Of course this cheese would be great with sparkling wine, so I pulled out some Crémant de Bourgogne...Bailly Lapierre NV Réserve Brut to be exact. They have been making bubbles since 1972 in the birth place of AOC Crémant de Bourgogne, a commune named Bailly. The bubbles are a blend of Pinot Noir, Chardonnay, Gamay, Aligoté. It’s crisp wine that’s well balanced. The perfect paring with the cheese, yassss!
