Watermelon ice is a delicious treat that is great for cooling off on hot summer days. With the naturally sweet watermelon and sour lime, it's a treat that won't make you feel bad and will satisfy your sweet tooth.
Ingredients: 4 cups diced watermelon, seeds removed. 1/4 cup granulated sugar. 1/4 cup water. 1 tbsp freshly squeezed lime juice. 1/4 tsp salt.
Instructions: In a blender, puree the watermelon until smooth. In a small saucepan, combine sugar and water. Bring to a simmer over medium heat, stirring until sugar dissolves. Remove from heat and let cool completely. Stir the cooled syrup, lime juice, and salt into the watermelon puree. Pour the mixture into a shallow dish and freeze for 1 hour. Remove from the freezer and scrape the mixture with a fork to break up any ice crystals. Return to the freezer and repeat scraping every 30 minutes until the mixture is completely frozen and resembles fluffy ice crystals, about 2-3 hours. Serve immediately or transfer to an airtight container and store in the freezer.
