Today's low carb lunch: BBQ Chicken Pizza (Cauliflower crust) SO GOOD!! Ingredients: •Cauliflower crust from trader joes •Low fat 3 cheese blend from trader joes (I think I used a cup) •About a tablespoon and a half of Sweet Baby Ray's Sweet & Spicy BBQ sauce •Grilled chicken (frozen) •Red onions Instructions: •You can make the cauli crust in the oven but it tends to burn quickly so I cooked mine on the stove top in a pan with olive oil. Just flip every few minutes til it's however crispy you want it •Cook your chicken...I put mine in a skillet with olive oil •after the crust is done, add toppings and broil on high til cheese is melted and onions are softened!
