Vino spumante metodo... familiare
Quando l'Italia non era ancora l'Italia per via di tutti i suoi distinti staterelli; quando quella parte trentina era l'allora sud dell'impero asburgico; quando durante il periodo fascista era bandito l'uso di parole straniere; quando dopo la prima guerra mondiale c'era il rischio di estinzione di molti vitigni autoctoni scongiurato dall'amore e dalla caparbietà di pochi...
Parliamo, per esempio, di vini frizzanti prodotti con metodo familiare: né champenoise, né charmat ma semplicemente familiare dove la fermentazione bloccata ripartiva poi in ogni singola bottiglia con l'aumento naturale delle temperature nei giorni caldi d'estate. L'anidride carbonica imprigionata si accumulava fino a che non si stappava la bottiglia, dando libero sfogo alle bollicine velate…
Arriviamo ai giorni nostri, a Domenica 20 marzo in cui ho degustato il Velato durante il Wine Tasting Varese.
Sono rimasta particolarmente colpita da questo vino, un uvaggio di lagarino bianco 50% e valderbara 50%, in tutta la sua ricchezza aromatica e gustativa. Due vitigni a bacca bianca di cui non avevo mai sentito parlare prima. La valderbara è un'ottima base per spumanti considerata la sua elevata acidità. Dopotutto in una bollicina cerchiamo anche e soprattutto la freschezza corredata, in questo caso, da un ventaglio di note floreali, fruttate e minerali in brioso equilibrio. Con piatti a base di crudo di pesce un vino così ci va a nozze...
Chi l'avrebbe detto che un bianco frizzante VELATO possedesse verve da vendere?
