These delicious spring rolls are packed with vibrant vegetables and can be made with or without chicken. They are crispy on the outside and full of flavor on the inside. Dip them in sweet chili sauce for an extra kick of deliciousness!
Ingredients: 12 spring roll wrappers. 1 cup thinly sliced cabbage. 1 cup shredded carrots. 1 cup bean sprouts. 1 cup sliced bell peppers. 1 cup sliced mushrooms. 1 cup cooked and shredded chicken optional. 2 tablespoons vegetable oil. 2 cloves garlic, minced. 1 teaspoon ginger, minced. 2 tablespoons soy sauce. 1 tablespoon oyster sauce. 1 teaspoon sugar. Salt and pepper to taste. Oil for frying. Sweet chili sauce for dipping.
Instructions: In a large skillet or wok, heat 2 tablespoons of vegetable oil over medium-high heat. Add the finely chopped ginger and garlic to the heated oil and saut for one to two minutes, or until aromatic. When the mushrooms begin to soften, add the slices and cook for two to three minutes. To the skillet, add the sliced bell peppers, cabbage, and shredded carrots. Stir-fry the vegetables for a further two to three minutes, or until they are crisp but still slightly tender. If using chicken, stir-fry it for a further two minutes in the skillet after it has been cooked and shredded. Add soy sauce, oyster sauce, sugar, salt, and pepper to season the stir-fry. Once everything is well-coated and heated through, stir everything together and cook for an additional one to two minutes. After taking the skillet off the burner, allow the stir-fried mixture to cool slightly. Place a spring roll wrapper on a spotless, level surface. Transfer approximately two tablespoons of the stir-fried mixture onto the wrapper's center. After folding the sides of the wrapper over the filling, tightly roll it up and use a little water to seal the edges. Proceed with the remaining filling and spring roll wrappers. Preheat oil in a wok or deep pan to 350 degrees Fahrenheit 175 degrees Celsius. Gently add the spring rolls and cook, stirring occasionally, for 34 minutes per batch, or until they are crispy and golden brown. After taking the spring rolls out of the oil, pat dry with paper towels. Present the mouthwatering spring rolls alongside a sweet chili sauce for dunk.
